Taco Tuesday 4: Taco Thursday

There is something to be said for a quest. I enjoy adventures almost as much, but a solid quest is where it is at. Where an adventure is an exciting or unusual undertaking, a quest is the search to obtain something and that something is typically of value to the quester. What started for me as an adventure in baiting the family into some togetherness wrapped in a tortilla shell evolved into a personal quest for a series of tasty taco recipes that I am able to execute to my own satisfaction.  This most recent attempt, Taco Thursday, was done with chicken breast. I love the traditional ground beef taco. I just have tons of experience with cooking and seasoning ground beef. My last go round with chicken was disappointing to me as I mentioned in my previous post on the subject.  I decided that I wanted to figure out a way to make shredded chicken work in a taco. Kindergarten Courage

 I have mad respect for my children. I am sure most parents do. It is a common enough sentiment. Being my kid cannot be the easiest childhood on the planet. I think of myself as tough but fair. I am probably just a hard case because I expect these girls to be better than me. They are too. Tegan started Kindergarten this year. I do not think there is anyone that knows me who has not been made amply aware of this fact. You would think after a few years of Pre-K that I would be accustomed to the kid going to school. There are differences and those are important.  Last year I drove the kid to Pre-K, we got out of the car together, and I walked her to her classroom and deposited her safely with her teacher. Same thing happened for picking her up. Taila or I would be waiting outside that classroom where Teagan transitioned from being watched by the teacher to us. I did not really have any big feelings around dropping her off or picking her up.  I did what I could to get us ready for Kinderga

The Saga of Taco Tuesday

I consider myself quasi quarantined.  I can go out into the world and take part in things having survived COVID-19 and dutifully gotten both parts of my vaccination. I do not think it is smart to do so. When I do go out I am wearing a mask and keeping my distance except for when it's time to record the podcast where I trust my partner,  who is also vaccinated,  to monitor his own health and stay away if he has symptoms.  I think being responsible with my health and the health of my family is important.  It sucks in the same sort of way I felt when I was a kid and was expected to eat my vegetables before having desert. That is to say it's probably not a big deal as I am making it out to be.  I find myself occasionally a bit stir crazy from the chosen isolation. I try and do things to keep myself entertained,  motivated,  and not in a funk. That is where Taco Tuesday felt like a fantastic idea.  I love tacos.
